Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. I met Dr. Doug Graham in person at the Raw Spirit Festival. He has a soft, gentle voice but his message is anything but soft. He's straight-forward about diet and health being intimately related. Dr. D. invited me to be his guest this past Saturday at a doctors' convention where he boldly stated to his audience of doctors: "I'm probably not going to make you all that happy with the things I'm going to tell you."
There he was, standing in front of a room of doctors who have taken an oath to harm none. These doctors were there to learn about health and nutrition, but I don't think they had any idea about what they were going to learn from Dr. D. "What I say may fly in the face of what you've been taught," Dr. D. admitted. Many of the doctors leaned forward a bit, eyes and ears a bit more open at the thought of hearing something radical.
Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet!
As a gift for Mother's Day, we sent a pasta-making tool to JoAnn along with a pasta sauce recipe we created for her (see the Paradisio Pasta Pomodoro entry). To make it easier for her to learn how to create pasta, and to answer some of the emails we've been receiving about the device we used to make the pasta, we have put together a two-part video showing how to make delicious, beautiful raw pastas! You'll learn how to use two different pasta-making devices, as well as how to use a simple vegetable peeler to create delicious noodles!
So, we've been building up to something exciting all week long -- and here it is! As it turns out, Kevin Gianni is not only a "renegade health" expert, motivational speaker, and all-around great guy; he's also a singer/songwriter!? And he even has his own CD called "God Loves Guinea Pigs" (original songs and artwork by Kevin).
During the past few days, we shared some great interviews with Kevin. In addition to all of the material covered so far, both Jim and Wendi had asked Kevin some musical questions. So, we saved those parts of the interviews for today. Here are the bonus sections from those interviews, including the funny story about Kevin dropping his pants in public!
Let's continue this video cavalcade with a very quickly made video basically peeking inside Karyn's Raw in Chicago. I didn't really have an opportunity to spend a good deal of leisurely time there, as I did with two other Chicago area restaurants, so this video is *very* basic, and not at all thorough in terms of what is offered there. But, if you're not from Chicago and have no other way to see it, perhaps its interesting to take a quick (just 3+ min) look. Here's the video:
When we were heading out of town, I said that this trip might be a bit difficult on Jim because it's his first time being exposed to our friend Mamta's Indian food while he's 100% raw. I created some rich, delicious dishes to keep him satisfied, so that the temptation wouldn't overpower him. I expected no problems for myself, since I've been raw for more than three years and have been exposed to this temptation before without any problems.
Well, guess what? The cravings are here! You see, Mamta is THE BEST Indian food chef EVER. We've eaten literally thousands of Indian meals over the years, and even enjoyed it while touring India for nearly a month in the 1990s, but nothing has ever compared to Mamta's skill at creating the most delicious food on the planet. As usual, she sent home lots of food when we left this weekend -- this time all for KDcat, who is so very happy she's not eating 100% raw foods. I don't even know how many different dishes came home with us, but their aroma has been extremely tempting.
I'm still sticking with my mono meal eating for Navratri. It's not as easy as I thought it would be, probably because I thought I wouldn't have any problems at all. Anyway, I'm sticking to it and we'll see if it makes me feel more energetic and healthy after the nine days are completed.

Jim here... Conventional wisdom says we shouldn't judge a book by its cover, right? Well, what about recipes? Should we judge them by their names?
When KDcat was young -- well before we followed a raw diet -- her friends sometimes scoffed at our typical vegan fare. After all, few kids would voluntarily eat "Pasta with Spinach Sauce."? But, we discovered, change the name and suddenly they're lining up for seconds. Instead of "Spinach Sauce," Wendi came up with "Jungle Sauce"! How exciting, right?
I am extremely thankful for sleep. I can't imagine striving to sleep only four hours a night. Jim always says he wishes he didn't have to sleep, that he's wasting his life when he sleeps. For me, I've always loved sleeping. I feel so great after I wake up. Not only that, I thoroughly enjoy dreaming. I wouldn't want to miss out on the amazing dream life I've been able to enjoy while I sleep.
