As Pure Jeevan blog readers probably know, we're big fans of running ongoing series. A good blog can never have too many, really. So today we mark the official kick-off of another super series. We're calling these articles "Pure Jeevan Guides."
Guides to what , you may ask. Well, to various topics of interest to raw foodies, of course!
For the past twelve years I've been doing some monthly freelance work for a nonprofit company. I've done other work in addition to the work for this company, but for the past few years I've solely been working with them. The work is sweet---straight-forward desktop publishing for a legal advertising publication. I don't have to read, write, edit, research, or anything else---simply format the pages. The pay is great, too!
Well, I just received a call a few minutes ago notifying me that the publication will no longer be printed. I'm overjoyed for the trees---I wish all publications would go digital. However, since it's going digital, they won't be needing my services much longer.
Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. What a momentous day she's in for in another 5 hours or so when she gets up and is greeted by such a surprise! If you'd like to say Happy Birthday, just leave a comment here! Thanks to everyone!
Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. However, if they are huge fans of Wendi's, they are more than welcome to contribute via email or comments! LOL ;-)

Before we moved to Portland, Oregon, land of all things fresh and organic within walking distance, we had to drive quite a distance to reach the food co-op (the only place that had a good selection of organic produce and other raw food necessities). So, we only went shopping about once a week. It took a lot of trial and error to find ways to keep our weekly produce fresh for about a week.
We learned which fruits and vegetables stay fresh the longest, and which go bad the fastest. Based on this, we stocked the refrigerator accordingly (and used up the produce accordingly, as well). The fruits and veggies that stayed fresh the longest were stored in the backs of the shelves (things like carrots, beets, broccoli, cauliflower, apples, etc.). Next we stored the greens that lasted a pretty good amount of time (like kale and collards). And in the front of the shelves and in the door, we stored the more delicate greens (like lettuces and herbs).

I'm not sure I'm getting enough carbs 'cuz I eat very little grains or beans and I am always worried of overdoing fruit.
Well, rest assured that if you are consuming enough calories with your diet, and not exclusively eating fats and proteins, you are most likely getting enough carbohydrates. Carbohydrates exist in just about anything you can eat. By simply eating enough food during the day, you can easily meet your body's carbohydrate requirements.
There are two classifications of carbohydrates: simple and complex. Grains and beans fall under the complex category, while fruits fall under the simple category.
