Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Last time on Raw Foods 101 we answered the question, "Why should you soak nuts / seeds before eating them."? Naturally, many readers then asked the next logical question, "How LONG should I soak them before eating " Great question!

Don't forget:? You're soaking the nuts and seeds to "wake them up" as would happen in nature. When seeds are soaked in the springtime rain, they wake up and begin to sprout. When this happens, the nutritional content of the nuts and seeds changes (they become an even greater powerhouse of nutrients).

One reason I keep going on and on lately about raw desserts and raw ice creams is best conveyed with an example. ?Here are the ingredients in Cool Whip, a commonly available whipped topping:

  • water
  • hydrogenated vegetable oil (coconut and palm kernel oils)
  • high fructose corn syrup
  • corn syrup
  • skim milk
  • light cream
  • less than 2% of:
  • sodium caseinate
  • natural and artificial flavors
  • xanthan and guar gums
  • polysorbate 60
  • sorbitan monostearate
  • beta carotene (color)

Wow, I had a chemistry set in 5th grade that had a lot of things that sounded like some of those items. It's actually mind-boggling to envision the industrial processes necessary to produce everything on that list -- not that it's entirely possible to do so. After all, among the list of ingredients are "natural and artificial flavors." Ever wonder what, exactly, those are?

Before we run this blog entry, let me first announce one awesome thing:? Wendi and Kdcat are back home now!!? Yep, the trip is now officially over, and was a HUGE success. Not only did our fearless raw travelers identify Pure Jeevan's soon-to-be new home town -- Portland, Oregon! -- but Wendi and KDcat also met and made friends with hundreds of people from around the country. I'm sure Wendi will be back here on the blog with overall reflections and so forth soon. However, the trip generated so much content that it's going to take a while to catch up!? So, let's pick up with the travel narrative where we last left off. As you may recall, the girls were leaving San Luis Obispo and heading into sunny Los Angeles! Let's see what Wendi had to say, again with her travelogue:

Wow, it's finally looking like CA with all the palm trees! After hitting and dealing with some major traffic of a large city, we arrived to the warmest welcome at the home of Debbie Young (of DebbieDoesRaw) -- a decorative greeting waiting on the door, gift bags handed to us as we walked inside, loving hugs and smiles, and the most amazing raw meal ever (samosas!, chai, pineapple lassi, mango chutney, tamarind chutney, biscotti cookies), and a snack basket waiting in our private apartment! At this stop, we were totally spoiled by Debbie and her beautiful family!

This is one of the stops I was really looking forward to, because Debbie and I have been online friends for a long time. We were able to spend a short amount of time together at the Raw Spirit Festival in 2008, and I loved her and wanted to spend more time with her and meet her lovely family in person (including their adorable dog, Malcolm).

There are four parts to blood: red blood cells, white blood cells, platelets, and plasma. Using a specialized microscope, one can easily view these parts of the blood. Red blood cells deliver oxygen to, and carbon dioxide from, the body. White blood cells, also known as leukocytes, help defend the body against disease and anything that they see as unnatural or foreign. Platelets help form clots to prevent bleeding. Plasma, comprised of about 90% water, is the fluid that transports all of the above.

It's counter-intuitive, when you really consider it; "raw foods" may be just two simple words, yet there always seems to be more and more to talk about, more people to interview, more success stories to highlight, more recipes to contribute, more tips and tricks to share, more personal reflections to offer.

For many people, a change in diet is largely a mental issue. You *decide* that you're going to do something different, and then commit to it. You may shop a little differently than before, but quite often that is the extent of any action taken (other than preparing and eating the new foods rather than the old ones).For many, the commitment aspect is the trickiest part. ?Books could be written on this subject alone (and we're sure we've discussed this at length here on the blog).

Today we want to share a super-easy tip to help with the commitment side of this: Keep your fruits and vegetables VISIBLE.

Here are more pictures of some of the foods we've been eating. Over the past year, we've pretty much been eating simple foods (except for the time I was preparing meals for the Raw Food Retreat). However, recently KDcat has been doing some extreme yo-yo eating between raw foods and packaged/unhealthy cooked foods. The back and forth has been causing her to experience a bit of a tummy upset. So, I've decided to make our meals a bit more exciting for her---so she'll possibly not feel so tempted by all of the colors and artificial flavors of the packaged "foods" she's been eating.

Talk about color...check out this salad I made earlier today:

A month has gone by since my last health update. At this point, I consider myself healed of lyme disease! In the past I asked the lyme specialist doctor if there's a way to test to see for certain the lyme is gone, but he said there isn't. So, I go on my inner wisdom, which tells me that it's gone and now I simply need to continue healing from all that the lyme brought with it.

We're still not comfortable sharing what we've been learning and doing to help move my body into an even healthier state, but it's obviously working. I've been able to go back to daily living, for the most part, without much assistance at all. I've organized the house again (Jim and KDcaT were busy caring for me and the house wasn't the top priority for the past half a year), caught up on all of the laundry, responded to all of my email that had been piling up, and I've been able to be more social again. The biggest improvements are that I can now prepare my own food without experiencing any pain, and I can dress myself with only minimal assistance at times! BIG improvements!
