Welcome to the very first Take the Time Tuesday entry! What's Take the Time Tuesday, you may ask? Well, it's a time to meet someone special. Each Tuesday we'll introduce you to an individual or business we think might be of interest to you. So, who's in the spotlight for this very first Take the Time Tuesday entry? Do you need to be 100% raw to release excess weight and regain your health There's no difinitive answer for that question because we are all unique. Sure, our bodies function pretty much the same way, but there are still enough differences that make it difficult to answer a question like that for it to be true for every single individual.

Most of us have heard of, or know, someone who doesn't eat a healthy diet, who smokes cigarettes and/or drinks alcohol, doesn't get enough rest, and also lives a stressful life---yet that person still has a healthy body and is over 80 years old. People like that seem to have resiliency built into their genes. Sure, who knows how long a person with such resilient genes could live or how vibrant a life that person could enjoy with a healtheir lifestyle. But, the fact remains that it seems no matter what a person's lifestyle is like, if you are born with resilient genes you are pretty much invincible to most illnesses.

A majority of the population isn't born with such impressively hardy genes, however. Most bodies can withstand the stresses of an unhealthy lifestyle until middle age. At that point, however, the body begins to show signs of ill health (excess weight gain, aches and pains, and the start of many diseases such as diabetes or high blood pressure). For a majority of those individuals, some healthy lifestyle changes can make a huge difference. Many individuals regain their health simply by changing their diets to include less fat and more vegetables, and by increasing their amount of exercise. Sure, it's a bit of work to make such changes, but if many people are committed to improving their health those simple changes can make a drastic difference in their lives.

Wow, today is Day 7 of the Big 2010 Tour! So far, Wendi and KDcat have spent three days on a train and three more in Portland, Salem, and Corvallis. We still have plenty of content to post from those, including a good deal of video (once I'm able to edit that). For now, let's look at some pics and talk about their second stop, Salem!

Prior to leaving, Wendi & KDcat (let's just say "W&K" from here on out, okay ) stopped at People's Co-Op in Portland for supplies. As much as they loved Portland, they weren't very impressed with the co-op there, as compared to the one we have in Pittsburgh. However, in fairness, they were told that it's still a "young" co-op. Still, it's surprising to me that Portland wouldn't have an enormous one. However, it could very well be that there is not as much of a need there, in an area in which organics are much more accepted. Here in Pittsburgh, one could argue that our co-op thrives because organics are largely scoffed at by other retailers. Interesting, eh?

(By the way, are people on the west coast really as laid back as everyone says Wendi got into a bit of hot water for filming inside another co-op! Here in Pittsburgh, I doubt anyone would care if you set up a movie set in our co-op. No charges were filed, thankfully.)

Jim here again... Wow, that's an excerpt from a very fired-up Wendi, writing a few years ago about her frustration over the USDA's absolutely insane regulation that nearly all almonds sold in the United States must be treated with chemicals or heat prior to sale. I'm sure you know the story by now, so I won't rehash it here. (In case you do not, you can read about it in our original post, Wendi's Almond Frustration post (which even recounts a disturbing, related dream she had about this issue), or our last update post. It's an issue we've been following for years here.)

Angela Stokes, well known and loved by many in the Raw Food Community, was interviewed on CNN back in September. The story was so popular that it has been mentioned on CNN, again! Professional dance is of most challenging sports requiring athletes to perform at expert levels of flexibility, strength, coordination and emotional fitness in order to entertain their audiences. Having been vegetarian since age 7, Tonya Kay has built her glorious professional dance career entirely on a vegetarian diet.

Persimmons are a tad unusual, aren't they? Perhaps they're simply uncommon. After all, few major grocers carry them regularly (at least, not in our area). But, occasionally, they crop up as a specialty, limited-quantity offering. That's more or less how we obtained some recently. Wendi *loves* them, so we quickly snatched up a few at our local co-op last week. Here's the vid (below).
