Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Even though it's not time to share everything with you about the life-changing events going on with us here at Pure Jeevan, I'm going to try harder to squeeze in a few minutes once in a while to update this blog with other information. Please forgive me for taking so long to respond, but once we fill you in on everything that's been going on, I think you'll understand that it's difficult to find time to keep up with email and blog writing, among other things.
The latest news, as far as raw foods go, is that I'm having a love affair with a particular fruit. When I was transitioning to raw foods over two years ago, and also during the first few months of eating 100% raw foods, I was in love with young Thai coconuts. I couldn't get enough of them and they did some amazing things for my body---the most amazing was lowering my cholesterol to a healthy range within one month! After many months of consuming at least one coconut per day, however, my love affair ended. I still loved those Thai coconuts, but they just weren't as attractive to me anymore.

This experiment isn't looking so great, right now. I'm gaining weight.
I've cut fat out of my diet until my evening meal. Here's what I've eaten over the past few days:
I'm still working on the dishes that will be served at the upcoming 3-Day Raw Food Spiritual Ashram Retreat (only 2 spots left!). Today, I worked on the Sandwich Fixin's that will be served for lunch on one of the retreat days.
I'm still doing my nine-day mono meals for Navratri. Since it's Makin' It Monday, instead of actually makin' a recipe, I'm dreamin' about it! After talking with my sweet friend Melissa, I thought I wanted to eat spinach pie when I end my mono meals. She was talking about it, shared how she was going to create it, and my mind was filling with the image of spinach pie, the smell and taste of it, and I wanted it right then.But, we don't have any spinach in the house right now. Since I end my mono meals after tomorrow's lunch, and don't have time to buy spinach at the food co-op, I decided to dream some more about what I'll be eating for tomorrow's dinner.
Then it came to me. I want beet pasta! Not just any beet pasta, but beet pasta topped with a creamy alfredo sauce! I picture it in my mind; I can imagine the taste of it, the texture, and it's so delicious. I think I want something green with it, too. Perhaps I'll start with a small salad. Ooh! Yes, that's what I'll do!
One reason I keep going on and on lately about raw desserts and raw ice creams is best conveyed with an example. ?Here are the ingredients in Cool Whip, a commonly available whipped topping:
- water
- hydrogenated vegetable oil (coconut and palm kernel oils)
- high fructose corn syrup
- corn syrup
- skim milk
- light cream
- less than 2% of:
- sodium caseinate
- natural and artificial flavors
- xanthan and guar gums
- polysorbate 60
- sorbitan monostearate
- beta carotene (color)
Wow, I had a chemistry set in 5th grade that had a lot of things that sounded like some of those items. It's actually mind-boggling to envision the industrial processes necessary to produce everything on that list -- not that it's entirely possible to do so. After all, among the list of ingredients are "natural and artificial flavors." Ever wonder what, exactly, those are?
