Well, it's nearing the end of 2009, and I've been unwell for half of the year. (To make a positive statement out of that, I'll add that I've been well for the other half!) It's hard to believe so much time has gone by and about half a year of my life was spent in pain, tears, and sometimes fear (mostly in the beginning of the lyme disease). I'm definitely looking forward to the new year, to leaving this disease behind me while taking the lessons I've learned with me into 2010.
As many of you know, I was very proactive in finding a "cure" to the disease as soon as it was identified. I tried allopathic remedies (antibiotics for about three months), alternative remedies (herbal protocols, vitamin/mineral/supplemental protocols, aromatherapy techniques, healing massage, hands-on-healing, water fasting, prayer/meditation/positive visualization), and so much more. Nothing completely cured my body from the lyme bacteria that seems to have spread throughout my body and found favorite spots to multiply (particularly in my shoulders and arms).

We're super excited to devote the rest to the week to featuring a variety of answers to the question "Are Raw Foodists Crazy " If you're just now tuning in, please read the back story and introduction to this, as posted yesterday. ?But, for now, let's get on with posting a few responses. I need fast & easy meal ideas (esp. breakfast & dinner) -- time is a luxury I don't have (taking 18 college credits, internship, PT job and I started a natural perfume business!). By the end of the day I am so exhausted that I'd rather not eat than go in the kitchen & try making somethin raw.
If you're dealing with exhaustion or fatigue, we'd like to direct you to a recent blog post discussing the subject. As for time being a luxury, we address that, as well, in the same post. You'll always hear the same thing from us about limited time in relation to your diet: Make the time! Your overall health is what's most important in life and it's imperative that you arrange your life so that you have plenty of time to not only prepare healthy meals, but to also eat them in peace without feeling rushed.
With that said, it's also important to realize that eating healthy doesn't need to take hours out of your life. There are plenty of raw food recipes that are not only quick and easy, but also packed with nutrition! A few years ago, my dear friend Melissa and I decided to split the cost and order a raw food home study course (then known as The Dr. Ann Wigmore Program).Let me tell you, this was not a cheap program that we purchased, but at that time there wasn't as much free information available on the Internet like we now have.
Was it worth the cost? Well, kind of. Since we had both been reading and learning so much about raw foods (she had actually been raw for a long time many years before), much of the information wasn't new to us. However, if someone was newly learning about raw foods, the program would probably have been fantastic. The quality of the materials we received wasn't great (photocopies of photocopies that were sometimes difficult to read, and some videos that were blurry or difficult to hear), but at least we had a lot of information at our fingertips.

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. As many of you know, I'm more of an intuitive eater than anything else. I eat what I intuitively feel my body needs most of the time. Well, for the past two weeks what my body has been asking for is cauliflower. I went through a cauliflower stage sometime last year, and it seems I'm back to eating that lovely white flower veggie again!
At first I was making mashed cauliflower (like? mashed potatoes) and keeping the recipe very simple. I've made complex versions of the mashed cauliflower before, but I was really drawn to a more simple taste so all I was adding was some olive oil, salt, and a tiny bit of macadamia nuts. Yesterday, however, as I was cleaning the cauliflower (since my body was telling me it wanted more of it), I had a sense that I wanted something more vibrant, more fun than simple mashed cauliflower. So, I followed my intuition (picking up whatever I felt my body wanted to eat with the cauliflower) and here's what I created...
The Environmental Working Group publishes something really useful called the Shoppers Guide to Pesticides. In it, they offer two handy lists: (1) The Dirty Dozen -- conventionally grown produce items that contain the most residual pesticides, and (2) The Clean 15 -- conventionally grown produce items that contain the least residual pesticides.
While we believe that organic is always best, there nonetheless are times when most of us (for whatever reason) consider purchasing or consuming conventionally grown (meaning "sprayed with pesticides") produce.
