I'm going to be including questions and answers more often on the blog, since we've had a lot of emails from many of you saying you found last week's Q&A helpful and fun to read. Well, it's officially summer here! This time of the year is extra special to us now that we're healthier. Not only is there an abundance of fresh, local organics to eat, but the sun also shows itself to us a lot more (Pittsbugh is ranked as one of the places experiencing the least amount of sunshine per year). The sun actually used to make me feel physically ill (I wrote a bit about that in an earlier post), but ever since I've switched to a raw vegan diet I find myself drawn to the healing sunshine.
Before switching to a raw lifestyle, we used to go on a lot of outings (picnics) and we'd also go camping. I remember a friend voicing concern when my diet was beginning to change to raw foods. She felt I wouldn't be able to go camping anymore and that things like picnics wouldn't be fun for someone eating a raw food diet. She thought I'd need access to a refrigerator in order to keep all my raw foods fresh and a kitchen where I could prepare the delicious foods she had been seeing me eat.

Our friend Kevin Gianni is turning 30 this weekend. When you do the math, that means he was born December 7, 1978, which was pretty much the apex of the disco era in America.It's no wonder the man struck the above pose in our back yard; dude's got the Village People in his blood! I'm fairly sure that we've covered how to *open* a young coconut (also known as a Thai coconut). It seems like each raw food site has a video and/or article about that. I think it's actually a commandment in the Official Raw Foodism Bylaws somewhere: "Thou shalt show everyone how to open a coconut."
But *selecting* them... that's something that's not often covered in-depth. It's an advanced topic -- super-advanced, even. So, are you ready to learn the secrets?

If you like raw cauliflower and fresh mint, I recommend you try this dish! Jim and KDcat don't like raw cauliflower much, so this dish wasn't a big hit with them. I, however, consumed the entire dish before the end of the day! I LOVED it!

Today, for Thankful Thursday, I want to focus on a raw food related subject: Raw Recipe Books! Without the many mouthwatering, visually appetizing recipes that have been created and published, I don't know if I'd still be living a raw food lifestyle at this time.
About two years ago, when I made the decision to transition into a raw food diet, there were some fantastic raw food recipe books available. A few years before that, when I tried raw for the first time with a dear friend of mine, there were books available but none of them were truly gourmet meals. It's amazing how much things change in just a few years! The newer books are filled with colorful pictures of the most visually stimulating foods, which never looked like simple chopped up veggies arranged nicely on a plate. We have a page with many raw recipe books listed, if you'd like to see some of the ones that are available.

Those consuming a raw food diet sometimes use a dehydrator to prepare raw food dishes. They do this at low temperatures, below the point of actually cooking the foods, to intensify flavors, reduce the amount of moisture in the dish, and sometimes to take the chill off something they'd rather serve a bit warmer than straight out of the refrigerator. There is a practice that we've seen, however, that is actually cooking the very foods were taking such great measures to consume raw! Let me share an experience I had when I first started eating raw foods, that will help explain how some of us may be cooking our foods by mistake.
In the beginning of eating raw foods, my entire family loved the Vegetable Stir-Dont-Fry I used to make (you can find that recipe in the free eBook you downloaded when you first visited our site). One day I created a double recipe so we could eat more the next day, without going through the process of preparing it again fresh. The following day I took the bowl of Stir-Dont-Fry out of the refrigerator and put it into the dehydrator to take the chill off. It wasn't warming up fast enough on such a low temperature, so I thought I'd just cover the dish a little bit to trap in some of the heat that seemed to leave each time I checked the dish and stirred it around. So, I took a plate and placed it on top of the bowl with about an inch, or two, opening.

A Bit of India in Pittsburgh s Back Yard?
During an intense personal journey in recent years, I ve discovered that the more I m able to know my true self, the more my perception of the world changes. As a result, my surroundings have changed as well ?people, places, directions. At one point, internal and external changes happened so rapidly, it was difficult to fully process anything; I felt overwhelmed.
Amid urges to explore so many new directions, all at the same time, it became impossible to focus. My initial instinct was to flee to India, where I could peacefully stay at an ashram and process all that was transpiring in my mind. Although circumstances kept me from traveling abroad, I knew I needed to simplify. That s when I remembered an old issue of Point of Light I d kept. I dug it out and quickly flipped through the pages? There it was: Peaceful Valley Ashram & Retreat, located just north of Pittsburgh!
