Many of you know some of my story of healing. I suffered with Polycystic Ovarian Syndrome (PCOS) since I was a young teenager. Over the years, I began putting on more and more weight until I was nearly morbidly obese. I learned a lot about PCOS and how there is always an accompanying issue with Insulin Resistance.
Countless overweight women search the Internet looking for help in dealing with PCOS, hoping to find a natural cure to the harsh medications often prescribed that tend to cause other health concerns in our bodies. One of the most often asked questions is from women who have a pretty good understanding of PCOS. They want to know if they need to be careful with fruit consumption if they have PCOS and are trying to lose weight.

These days, I spend most of my free time cleaning up our fixer-upper home in Portland, so I haven't been going to the gym or regularly running as I had in the past. ?Hopefully, the house work is sufficient physical activity for me -- it sure does generate an appetite most days!
Some of you who are new to raw foods may be happy to learn that there are festivals for individuals interested in the raw foods lifestyle! They are a fantastic opportunity to meet like-minded friends. For those of you who attended the Raw Spirit Festival in 2008, seeing images from that event may stir the magical memories you collected while there.

When we found out that there was a raw foods restaurant in Key West, we knew we'd visit for sure. So, after a wonderful lunch of some of their raw staples (raw tacos and peanut noodles), it was no surprise to us that we found ourselves drifting back toward Help Yourself after the sunset celebration at Mallory Square (the main nightly Key West sunset viewing celebration). When we arrived, we asked to interview the owner, Charlie Wilson. She'd just left after working a very long day at the restaurant. But, an emplyee called her anyway and she graciously agreed to come talk with us! So, here's a bit of that conversation:

Today, we'd like to take the time to introduce some raw athletes who continually inspire others. There is a huge misunderstanding about the need for protein in our bodies, especially within the world of competetive sports. Many believe that without large amounts of protein we can't be strong, we can't build muscle. Raw athletes are proving that a vegan diet not only supplies enough energy to sustain the human body during competition, it also allows them to many times outperform competitors who are half their age.

Jim here... Until our home sells (SOON!!!) and Wendi and I launch ourselves into the world as full-time raw food teachers / lecturers / inspiration providers, I'm more or less stuck in the corporate world during the day. While much of what happens in this Dilbert-esque environment is, as many of you likely know, absolutely meaningless, there is nonetheless the occasional pearl of wisdom to be pried from the clammy jaws of the 9-to-5 world. I was, for example, just reminded of a story I heard at a seminar once. Not surprisingly, the seminar pertained to the art of money making. However, there's another more fulfilling message to it as well. A large modern newspaper company still uses these ancient printing presses from the 1950s -- huge old monstrosities with enough belts, pulleys, and greasy gearboxes to make any modern-day steampunk enthusiast squeal with delight. One day, not long after the old press manager finally leaves the company, the main press breaks down. Manuals are consulted, technicians brought in, engineers asked to take a peek. No one can bring the beast back to life. But there's a woman on the Internet who specializes in these babies -- and, guess what, she's local! So, they call her in. She listens to their problem and says she can fix it, but it's going to run them $5,000.
Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet! As a gift for Mother's Day, we sent a pasta-making tool to JoAnn along with a pasta sauce recipe we created for her (see the Paradisio Pasta Pomodoro entry). To make it easier for her to learn how to create pasta, and to answer some of the emails we've been receiving about the device we used to make the pasta, we have put together a two-part video showing how to make delicious, beautiful raw pastas! You'll learn how to use two different pasta-making devices, as well as how to use a simple vegetable peeler to create delicious noodles! Wow, is it really Episode 3 already? How time flies! Remember way back when we started this informative, informational, nutrition-oriented "Know Your Food" series? Seems like ages ago, doesn't it? (Oh, wait... It WAS ages ago. It's just taken us a while to get up to speed with this video stuff!) Anyway, here's the video, followed by some camera/video editing news -- oh, and of course some highly urgent celery information. (Okay, it isn't really urgent at all; we just needed to add a dash of drama.) So, see what you think. You might even learn a thing or two about our stalky green friend.
Not TOO bad, right? We're getting to our goal of roughly 3-minute episodes. Of course, this is still one of our first attempts, shot last Sunday. We thought it was decent enough to not entitle it "salvaged" as we did the previous installment.
I met Dr. Doug Graham in person at the Raw Spirit Festival. He has a soft, gentle voice but his message is anything but soft. He's straight-forward about diet and health being intimately related. Dr. D. invited me to be his guest this past Saturday at a doctors' convention where he boldly stated to his audience of doctors: "I'm probably not going to make you all that happy with the things I'm going to tell you." There he was, standing in front of a room of doctors who have taken an oath to harm none. These doctors were there to learn about health and nutrition, but I don't think they had any idea about what they were going to learn from Dr. D. "What I say may fly in the face of what you've been taught," Dr. D. admitted. Many of the doctors leaned forward a bit, eyes and ears a bit more open at the thought of hearing something radical. |
