Today for "Take the Time Tuesday," we'd like you to take the time to meet Mimi Kirk, whom many of you may know as the winner of PETA's "Sexiest Vegetarian Over 50" contest last fall. If you're interested in longevity, and how diet influences the way we look, act, think, and exist, then you'll definitely want to listen closely to what this vibrant woman, who is 71 years young, has to say. Yesterday, we talked about live blood being a fantastic indication of overall health and well-being.Wendi's initial live blood review didn't show the extent of the Lyme disease. But, it did show an indication that something was going on (while Jim's blood showed overall health).

What better way to start our Fun-Filled Friday than by celebrating Jim's birthday ! He worked for half the day and now he's home for a long weekend. So far we've had a nice lunch (cashew/macadamia cheese with red peppers and celery) and birthday pie (mango and pineapple!) after singing "Happy Birthday" to him! This evening we'll have veggie stir-not-fry, since that's what Jim has requested. I prepared it earlier and it's in the dehydrator to marinade and get a bit warm.
I received some very sad news about the holistic doctor I've been seeing during my raw journey. Dr. Amy Ruth Stine died Saturday after a rock climbing accident. This news breaks my heart. Dr. Stine was an amazing woman and doctor. She was extremely intelligent, acutely in tune with how we are all connected and one, compassionate, loving, thoughtful, and had a gift of really getting to know each patient as an individual and friend.
It was with Dr. Stine's care that I was able to track my progress with the raw food diet. She encouraged me to follow my instincts (which were telling me that raw is the way), cheered me on with the many changes that I was going through (physically, mentally, spiritually, and emotionally) over the years, and told me many times that I inspired her! Imagine how wonderful that made me feel---to be inspiring someone as wonderful as Dr. Stine.

The 3-Day Raw Food Spiritual Ashram Retreat was a success! All my time and effort that went into creating the event was well worth the experience. When Leela Mata and I discussed a possible raw food retreat about a year ago, I had no idea how to go about creating such an event. I have never done anything like this, so I approached it by asking myself: "What would I want if I was attending a raw food spiritual retreat " From there, I created a retreat that I would love to attend, myself. In fact, when it was completely organized and guests began signing up, I wished that an identical event existed that I really could take part in, as well!
It's Fun-Filled Friday again---that week went by so quickly! So, what fun did you have this past week and what fun have you planned for yourself in the near future? It's very important to make the time for fun. We all know that, right? But, how many of us actually carve out the time to have some special fun without stress, without problems---a time when we can laugh and experience the joys of being alive?
I knew right away that I would be filing this under our "Fun-filled Friday" bannner. Finding pawpaws is a huge treat! They're surprisingly little-known, and also very surprisingly tropical in nature. Who would think that something this delicious and exotic-tasting would thrive in so much of the non-trpoical world!? As many of you know, I'm more of an intuitive eater than anything else. I eat what I intuitively feel my body needs most of the time. Well, for the past two weeks what my body has been asking for is cauliflower. I went through a cauliflower stage sometime last year, and it seems I'm back to eating that lovely white flower veggie again!
At first I was making mashed cauliflower (like? mashed potatoes) and keeping the recipe very simple. I've made complex versions of the mashed cauliflower before, but I was really drawn to a more simple taste so all I was adding was some olive oil, salt, and a tiny bit of macadamia nuts. Yesterday, however, as I was cleaning the cauliflower (since my body was telling me it wanted more of it), I had a sense that I wanted something more vibrant, more fun than simple mashed cauliflower. So, I followed my intuition (picking up whatever I felt my body wanted to eat with the cauliflower) and here's what I created...

While on our walk, Pete pointed out that in the building on our right there are some amazing kale chips being produced. Kale chips ! I asked if he was referring to raw food kale chips and he nodded. Of course, I had to investigate and find out who was producing them and possibly meet the person. Well, what a treat we were in for!
One of the workers directed us to an office nearby where we met a lovely woman named Blessing. It turns out, Blessing is the producer of the kale chips we received from our Official Snack Sponsor during our tour, Natural Zing. Not only does Blessing produce some of the most popular kale chips in the raw community, her company is also the manufacturer of the famously delicious "Raweo" cookies (which you can find on Natural Zing's site)!

For those of you who've been following our plans for a few years, you know we've been preparing for a cross-country tour for a long time. The plans have expanded, contracted, changed dramatically, but the core of the idea has always been there: we plan on relocating to a new city and we need to find the right place for Pure Jeevan to settle. In order to do that, a big cross-country tour is in order. So, the exciting news is that we're leaving in a couple of weeks to check out some of the cities/towns we're thinking might be a perfect fit for Pure Jeevan! The sad news is that all of us can't make the trip. Jim will be holding down the fort here in Pittsburgh (i.e. the house still hasn't sold and he still needs to keep his corporate job so we can pay the mortgage).
