Finally, some super news to share!? On Monday, after a l-o-n-g wait, Wendi finally had her appointment with a actual LLMD. (That stands for "Lyme Literate Medical Doctor."? If this and the news of Wendi's Lyme Disease is new to you, check out this post.)
I'll cut straight to the good part: Her prognosis is excellent! Yes, she's still in a world of pain and misery at the moment, but he believes (based on her blood work and her symptoms) that we've caught this early enought to fully eradicate the Lyme. (At least, that's how I understand it. I'm actually not clear on whether Lyme is ever 100% eradicated, or if it's just forced into dormancy or irrelevancy. Perhaps Wendi can clear that point up later.)

In one daily newsletter that Wendi and I subscribe to, there was a discourse recently about being right -- but being right for the wrong reason. I've long been interested in that concept; it's fascinating, when you really think about it -- like getting credit on a test for an answer you guessed at, or knowing how to say something in another language but not knowing what it means. Along those lines, I'd like to share some personal opinion with you.
One of the common pro-raw arguments is that it's a calorie-restrictive diet and thus healthy because it limits our caloric intake (a regimen widely associated with extended lifespans in scientific literature).If you consider that a pound of greens or veggies has about 100 calories (generally speaking) and a pound of fruit has 300-400, imagine the incredible amounts of food you could ingest daily and still be considered calorie-restricted (as compared with the recommended number of calories for your build and lifestyle)!

I know poor Deb Young is eagerly awaiting our next installment, as that's the one from Wendi and KDcat's visit to sunny L.A. There are certainly a few essential elements (e.g. good knives, cutting boards, a good food processor, etc.) to any raw food kitchen, and one of them is an awesome high-speed blender. Yes, there are many great blenders in the world, and yes there are a few decent top-of-the-line models on par with Vita-Mix. But, at the end of the day, our recommendation is the Vita-Mix (and yes, it's better than Blendtec, in our view). Here's a crazy video Jim did a while back for a Vitamix contest:

We purchased ours 15+ years ago, and have subjected it to at least daily use (if not many times per day most of the time!) -- and it's still going strong. If you don't understand why a Vita-Mix is different from even a high-end blender from a department store, it's basically the sheer power. These things can pulverize pretty much anything -- time after time, without blowing out the motor. For example, you can make ultra-thick, healthy, raw ice creams day after day all summer long, and the machine will keep on working for years (and, in our case, we're almost ready to say "decades").

A few weeks ago, we hosted a Diabetes Awareness week here at Pure Jeevan. This was our contribution to the larger Reversing Diabetes Naturally movement that we blogged about. I suppose that, when you buy more produce than the average consumer, you come to observe a thing or two about that produce. We can't say for sure that our assertion is 100% true, but it sure does seem true to us. You see, we've noticed that produce we purchase at farmers' markets tends to keep longer than store-bought. Give it a try yourself, and see if your produce stays fresher longer!
Of course, there are many other benefits to shopping at farmers' markets. Aside from the produce being able to stay fresh longer, you're getting it in a much fresher state than store-bought. So, the things you eat first will be "extra" fresh tasting.

I thought I'd put another fun week together here at Pure Jeevan while Wendi is away (although, actually, ALL of our weeks are fun-filled here!). This week, I thought I'd discuss herbs, spices, and essential oils. Of course, I can't cover those enormously important (and huge) subjects in-depth over the course of just one week, so I created that little banner (above) so that we can re-use it from time to time.
Herbs are fascinating, aren't they? Sometimes, you don't even consciously know why you use the ones you do but, invariably, there's a reason. Sure, sometimes recipes call for a specific flavor. But, often, there are other reasons as well -- such as to support digestion, or to provide a warming or cooling sensaiton. This type of thing is critical in ayurvedic principles, as we touched on recently on this blog, where the spices could be present for digestive or medicinal purposes, or of course as a preservative.

During some "highway philosophization" (my term for pondering everything and anything while driving) this afternoon, I eventually began to think rather deeply about human aggression, and specifically about how people hurt other people. Mainly, I was thinking about individual aggreession, although, as a group, humans are unfortunately rather prone to it.Wikipedia maintains a list of ongoing conflicts (i.e., wars), in fact. According to that page, there are seven major wars happenning right now and 15 additional significant ones. Of course, there are scores of unlisted ones ongoing as well, most of which the average person has never heard about.
