This video is nearly 10 minutes long (sorry, we'll aim for shorter ones in the future), but shows a full process for making a delicious, spicy nut dip. From there, we show two options for making the sandwich -- one using dehydrated raw bread, another using lettuce as the wrapper. This Thursday I want to give a special "Thank You" to Kevin Gianni. He was on my list for a Take the Time Tuesday introduction, but I didn't want to wait until then to tell you about him. I've been following Kevin's work on the Internet since he hosted The Raw Food World Summit last year. You can tell when you hear him speak that he's a genuinely nice, intelligent, caring person. He's honestly listening to what people are saying, trying to absorb the plethora of health information that's available. He asks a lot of interesting questions, too. He then takes what he has learned, condenses it, and shares the knowledge with the rest of the world. He does all of the hard work for us! For this, I wanted to give a special thanks to him.

Jim here... About an hour ago, I purchased $68 worth of ice cream from a local supermarket. Bet you thought you'd never read something like that here, eh ? Well, don't worry -- Wendi and I haven't suddenly decided to binge on dairy products. You see, in my corporate job, I'm often the event organizer; today that meant ice cream gopher.

For some raw foodies, that scenario might seem rather cruel. You may be thinking: Isn't it tough to have to go purchase nine tubs of ice cream, two jars of maraschino cherries, two bags of marshmallows, four containers of flavored syrups, two cans of whipped cream, and numerous boxes of waffle cones ? No, it's not cruel at all. To me, it's now the same as running out for, say, office supplies.

Wow, I just took a gander at the "Best of Raw" web site and saw that Pure Jeevan is nominated for all sorts of great things -- singling out Wendi, me, Pure Jeevan, this blog, and the All Raw Directory over at least eight different categories!

We really appreciate the nominations, so thanks so much to those who took the time to do that. We'd love it if you would vote for us for "Favorite Raw Blog." (You can do that now by going here.) Of all the things we were nominated for, that's probably the one we've really put the most effort into.

Jim here... Sorry for being away for so long. We've got SO much going on these days, it's mind-boggling! More on that later, as I have something in mind already for today...I should start by clarifying that I've been basically raw for almost 4 years now (high-raw, you might say). During the first nearly-two years, I still ate meat from time to time. Actually, I still ate (and drank) almost everything from time to time -- sugars, processed foods, alcohol, you name it -- only less than I did before, and within the context of a dietary intake consisting of a significantly higher percentage of living foods. In those early years, I'd estimate I was averaging 75-90% raw. Not bad ... I definitely experienced improvements in my health!

The big change in consciousness didn't follow until two years ago. (This is an interesting point because, as you can see, I wasn't "ready" for a bigger change for two years into eating a lot of raw foods!) I suppose the difference was that, during the early years, I was pretty much raw by default rather than by conscious decision. As Jules said in Pulp Fiction, "... my girlfriend's a vegetarian. ?Which more or less makes me a vegetarian..." Yeah, that was my case back then, too, although I certainly grew into it (and am thankful that I did).

We're heading out of town again! This time we'll be visiting Leela Mata at her Peaceful Valley Ashram, the location of the first raw food spiritual retreat I held last year.
