Wow, who knew there would be so much to post here on this blog about Wendi an KDcat's 2010 tour ! Today is March 15, which officially marks the beginning of the second half of the trip -- and we're still talking about Portland! ? Since Portland, Wendi and Kdcat have had adventures in Grants Pass, Santa Rosa, San Francisco, San Luis Obispo, and as I write this there are two more angels in the City of Angels.

But, in the interest of keeping our coverage chronoligical, we'll continue where we left off last week -- Portland! Story, pics, and video all appear below!

Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!

As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

Jim here... Happy Sunday morning, everyone!? We don't normally post on weekends, but we're sharing this video as a special gift for my mom on Mother's Day.As Wendi likes to say, "Every day is mother's day!"? But, I do like to do something a little special for my own wonderful mom. So, check out this video of a recipe Wendi (mostly) and I created for her. If you remember my reaction to the soup we made recently, it may not surprise you to hear me say that this sauce is the "best #$%^&*^%! sauce I've ever tasted!"

We're typing up and formatting this recipe for Pure Jeevan family members (you know, those who subscribe to our mail list). So, once it's ready, we'll be adding it to the queue of mailings we sent out to keep everyone inspired. This recipe is a keeper!

As we said yesterday, we have some fantastic videos to share from RSF East last weekend. To launch a series of interviews, we want to reiterate that Pure Jeevan has always been a holistic site, meaning that we like to focus on all aspects of a human being's optimal existence (mind, body, spirit, and emotions). While it's not always "all about the food" here, it's also fair to say that it all really does start with the food -- super-nourishing 100% raw living foods! So, it's only appropriate that we begin this series of interviews with a raw food chef.

RawDawg Rory was a huge pleasure to meet and hang out with. The man exudes happiness, and it's quite infectious! We had a great time talking, and of course talked a lot about tasty raw foods. In this video, RawDawg shares a delicious dessert recipe. Here it is:

I love this video, in which Wendi interviews our new Portland-based realtor, Bill Futrell. It's a nice interview, but I love the way Wendi's enthusiasm for raw foods rubbed off on Bill almost immediately. There's even a moment in here in which Bill starts talking about Natural Zing. We thought for sure everyone would think we put him up to that, but he did it absolutely spontaneously! So, thanks Bill for helping to support our Snack Sponsor. Anyway, here's what he had to say about Portland, about where we'll fit in, and about his first exposure to raw foods:

One thing I can tell you for sure: Portland is WAY more expensive than Pittsburgh. A year ago, I invested a ton of time reading about low-cost cob houses, straw-bale construction, Earth-ship homes, homes fashioned from "obtanium," thatch roofs, off-the-grid systems, igloos, you name it -- anything DIY-oriented. (Okay, well not igloos; that was a joke. Even though igloos are probably pretty neat-o.) I'm sure we'll get to many of those types of projects one day still. But for now, as you can see, we're going to put down roots in a really great city out West. We're doing it with intention, though, and in harmony with our mission to help ourselves and others obtain the highest levels of health and happiness.

Wow, I'm having a tough time keeping up with our fearless travelers! I thought I'd break their San Francisco adventures up into FOUR smaller posts made from Wendi's personal travelogue. I'll try to address everything they did chronoligically. There will be a video in this posts, videos in the next post, and a picture set at the end! Here's what she had to say about their first stop in Frisco:

For our San Francisco/Berkeley visit, we first met up with a college friend, Pete Guinosso, at Cafe Gratitude. It was fun catching up, and Pete treated KDcat and I to our meals. While at the table, I labeled Pete as the "Quote Man" because he had a fantastic book of quotes he has been collecting. He periodically read from it as our conversations brought specific quotes to mind. It was a beautiful collection of poems, which Pete said is his second book and is filling up quickly.

Cafe Gratitude lived up to its reputation of having a great vibe with pleasant servers and fantastic raw foods. I wondered, however, why there isn't a dish called "I am Love." (There is a drink called "I am Loved," but I was interested in one that claimed I AM Love. Maybe they'll come up with one for my next visit!) After leaving Cafe Gratitude, I have to admit I wasn't overly grateful to find a $40 parking ticket waiting on the rental car. OUCH! We kept the car parked there (since it was already ticketed), and Pete showed us around the Berkeley shopping area. It was a fun stroll on a beautiful sunny, California day.

As promised, here's another question I'd like to openly address here instead of via Wendi's email system. This one also comes up from time to time, and I told this person to watch out for my two cents on this issue. So, here it is. The reader asks:

... During your transtioning to a raw food diet & the loss of so much weight, what if any exercising were you doing along the way

It's a beautiful day here. The sun is actually shining enough through the clouds to soak up some of its lovely rays. It feels so good. What a great way to start the weekend! We have no set plans, other than a trip to the local food co-op and a visit from the bunny. If the weather continues to be this nice, maybe we'll take the puppy over to the park and spend the afternoon enjoying the sights, smells, and sounds of Spring.

We're heading out of town again! This time we'll be visiting Leela Mata at her Peaceful Valley Ashram, the location of the first raw food spiritual retreat I held last year.

We've been extremely busy, but KDcat and I did take some time to make some dehydrated food the other day. We rarely ever use the dehydrator, so we've been eating different foods than we normally do and enjoying it.
