This recipe is an adaptation of one from "Rawvolution", by Matt Amsden. As of this point in time, "Rawvolution" is my favorite recipe book. Most of the recipes are high in sodium and fat, but very satisfying for those who are used to eating cooked foods.

As we said yesterday, we have some fantastic videos to share from RSF East last weekend. Jim here... We had a whirlwind weekend last weekend when the uber-talented couple Rhio and Leigh came to Pittsburgh for a three-day visit. As many of you probably know, Rhio is a well-known pioneer of the raw food movement, having written one of the definitive books on raw foods, Hooked on Raw. She's also the host of a popular Internet radio show of the same name, for which Leigh serves as primary engineer and co-host. Both have extensive backgrounds in music, as well, which is fitting for such a colorful, vibrant couple.
Saturday, Rhio gave a two-part presentation to a capacity crowd at a local coffee shop / art gallery.Part One was a demonstration on making raw dairy-free yogurt using almonds (a technique demonstrated, I believe, on her new DVD, "What's NOT Cookin' in Rhio's Kitchen " -- available soon on her web site at www.rawfoodinfo.com). According to the yogurt eaters in the crowd (of which I'm not one -- never went in for much dairy), the recipe mimics yogurt perfectly! So, if you're a raw foodie who misses dairy yogurt, you're definitely going to want to connect wth Rhio to learn the technique.

After a very active visit in the San Francisco / Berkeley area, we headed down the coast to San Luis Obispo, CA. There's a pretty active raw food meetup there and we were asked to stop in their town to give a talk to their group.
It was a nice drive south, but the sun is a bit brighter than we're used to (especially when driving long distances). When we arrived in the town, we were overcome by the beauty of the place. It's one of the most beautiful places we've seen in California, so far!

It's not much longer before I'll be serving all kinds of delicious foods to those attending the 3-Day Raw Food Spiritual Ashram Retreat! I've been working on the recipes and taking pictures to include with the bound materials going home with everyone attending the retreat.
As promised, here's another question I'd like to openly address here instead of via Wendi's email system. This one also comes up from time to time, and I told this person to watch out for my two cents on this issue. So, here it is. The reader asks:

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Is low fat more expensive? When I was eating a lot of nuts and seeds, in the back of my mind I kept saying, "Someday you'll eat less of these nuts and seeds, and you'll save a lot of money." I really believed that to be true because organic, raw nuts and seeds are outrageously expensive.
For one hundred days, I'm transitioning to a lower fat raw diet. I'm down to fats only in the evening, and for the next ten days those fats will only come from avocados, young coconuts, and possibly some hemp seeds. If I'm not hungry for the fat, however, I'll go without it. That hasn't been the case yet, though. By dinner time I'm ravenous and wanting to eat heavy, dense foods to calm the hungry beast in my belly. Even though I've been including some fats in the evening, I'm eating significantly less than I normally would if not doing this challenge. So, I've been eating more fruits and vegetables to get the calories I normally received from nuts and seeds.

Mononucleosis (Mono) is a common viral illness. When children develop mono, it is usually not obvious since it seems like a normal cold. When teens and adults develop mono, however, the symptoms are much more severe. Most individuals will feel better within about three weeks, but fatigue can continue on for about three months! Who wants to feel ill that long? Who wants to feel tired for MONTHS ! Who wants to suffer from such severe headaches ! Not me, that's for sure.

Three months ago today, we put up a post called "Is Alcohol Raw " I wanted to post a little follow-up to that today, while I'm thinking of the story.
