A month has gone by since my last health update. At this point, I consider myself healed of lyme disease! In the past I asked the lyme specialist doctor if there's a way to test to see for certain the lyme is gone, but he said there isn't. So, I go on my inner wisdom, which tells me that it's gone and now I simply need to continue healing from all that the lyme brought with it.
We're still not comfortable sharing what we've been learning and doing to help move my body into an even healthier state, but it's obviously working. I've been able to go back to daily living, for the most part, without much assistance at all. I've organized the house again (Jim and KDcaT were busy caring for me and the house wasn't the top priority for the past half a year), caught up on all of the laundry, responded to all of my email that had been piling up, and I've been able to be more social again. The biggest improvements are that I can now prepare my own food without experiencing any pain, and I can dress myself with only minimal assistance at times! BIG improvements!
In the comedy film, L.A. Story, there's a scene in which weatherman Harris K. Telemacher (Steve Martin) visits a friend and is asked to taste a *very* green-looking juice. He does, and then proclaims it's "exactly like licking a shag carpet." ?Funny how some people adore intense greens while others experience the polar-opposite reaction. (There are numerous funny food- and health-related jokes in that movie, by the way!)
Yesterday, we discussed some unusual considerations with respect to greens, ultimately leading to a brief discussion of chlorophyll (the green pigment within almost all plants that plays a key role in photosynthesis).
The new Vitamix container arrived within two days (they knew we were hard core Vitamix users and put the container in the mail the day we ordered it to replace the broken one). So, what was the first thing we made in our shiny new container (after washing it, of course)? A DELICIOUS coconut smoothie!
Okay, we promise that, once the "Know Your Food" series normalizes (hopefully by next week), we'll be posting daily 3- to 4-minute segments, not these gargantuan bandwidth- and free-time-hogs! But, it's a decent 8 minutes of solid entertainment (kind of/sort of). So, hope you enjoy. We call this "Episode 1 (sort of)." You'll see why. Recently, at the store, I came across a little plastic tool, priced at $1.49. It was an orange peeler. I'd never heard of such a thing. As someone who eats about 20 oranges/week, I was intrigued. Do you mean to tell me, I thought, that my days of laboriously de-skinning oranges would disappear (those trips to the company bathroom to remove the orange pulp from my fingernails!)?
Our friend Kevin Gianni is turning 30 this weekend. When you do the math, that means he was born December 7, 1978, which was pretty much the apex of the disco era in America.It's no wonder the man struck the above pose in our back yard; dude's got the Village People in his blood! Do you feel that something like live blood testing, or mineral level testing would be beneficial? Wendy, after following your long ordeal with Lyme disease **Gentle Hugs to you** I believe you might be able to understand the pain, fatigue and depression that is involved while dealing with a chronic illness. ?I am looking forward to hearing more about your healing journey!

This recipe is an adaptation of one from "Rawvolution", by Matt Amsden. As of this point in time, "Rawvolution" is my favorite recipe book. Most of the recipes are high in sodium and fat, but very satisfying for those who are used to eating cooked foods.
