Continuing with our Taco Week, here's a quick and easy (and delicious) salsa recipe. You can really have a lot of fun with salsa, and can get highly experimental if you like. Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. Getting Lyme Disease after regaining my health on the raw foods diet was a tough thing to accept. How could a body cure itself with a raw food diet, yet then fail to even recognize and destroy the Lyme bacteria? So many individuals have recovered from awful diseases, including cancer, by eating a raw food diet. Why, as a raw foodist, has my body been unable to easily eliminate this lyme disease?
I know Jim and I weren't the only ones wondering this. Many of you have voiced concerns, as well. Questions have been asked about how healthy my raw diet has actually been. Hi everyone!? Sorry for the late post tonight. I had a busy day, and even met with a new realtor to help me sell The Luck House! (Wish us luck on that front -- but I have a super-great feeling that this new realtor is 10x more professional and knowledgeable than the previous one.)
Today I thought I'd give you a peek into Wendi's rather fascinating Inbox. While she's away, she asked me to monitor her Pure Jeevan mail box and field as many of the questions as possible. It's been ... interesting! :-)? I never realized the volume of email that she receives! It's almost a full-time job to keep on top of it (which I haven't been able to do as well as I'd hoped -- although I now have it down to just a ?hundred or so unanswered ones, so that's progress!).
Some of you who are new to raw foods may be happy to learn that there are festivals for individuals interested in the raw foods lifestyle! They are a fantastic opportunity to meet like-minded friends. For those of you who attended the Raw Spirit Festival in 2008, seeing images from that event may stir the magical memories you collected while there.

For many people, a change in diet is largely a mental issue. You *decide* that you're going to do something different, and then commit to it. You may shop a little differently than before, but quite often that is the extent of any action taken (other than preparing and eating the new foods rather than the old ones).For many, the commitment aspect is the trickiest part. ?Books could be written on this subject alone (and we're sure we've discussed this at length here on the blog).
Today we want to share a super-easy tip to help with the commitment side of this: Keep your fruits and vegetables VISIBLE.
On this lovely Valentine's Day, I am focusing on how thankful I am for LOVE! I'm not into the whole this-is-the-day-you-are-supposed-to-show-love thing, though. I think love is something that should always be around, felt, and shared. Every day is a new day to express the love you have in so many varied ways, why hold it back for one special day a year?
"My biggest problems are starches... I grew up with them so they are emotional comfort foods."
Well, it's great that you already understand that your desire for starches is mostly coming from an emotional connection with those foods. You're already much more aware of your body and its cravings than many others who are trying to lose weight.
If you have a strong connection with starches, then go ahead and eat them in the beginning of your journey to better health. Simply start by adding more and more fresh, raw, water-rich fruits and vegetables. The more you consume healthy fruits and vegetables, the more your body will begin to crave them (no kidding!! You will actually one day crave a salad as much as you're craving starches right now!).
