On March 6, Wendi and KDcat arrived around dinner time at their next location, Grants Pass. We've known their hosts as online friends, so it was a real treat to meet them in person. Rebecca Leaverton, her hhusband Dominic, and their twins Aubrey and Sebastian live in a beautiful home in one of the more beautiful places W&K have visited in Oregon (and that's saying something, as EVERY location in Oregon has been absolutely beautiful). Grants Pass is surrounded by the most breathtakingly gorgeous mountains, close and ever-present no matter where you are in the city. If we ever do decide that city living isn't for us, Wendi said she'd love to live in the mountains surrounding Grants Pass!
Here's some video... In the first clip, Wendi shares a raw traveling trick she came up with -- kind of a high-energy, super-fast sandwich. Then Rebecca (aka SuperfoodGirl -- from www.SuperfoodGirl.com) demonstrates one of her favorite pieces of kitchen equipment, the V Slicer. (Wendi loved it and says we need to save up and get one when she returns from the trip.) And then we couldn't resist a few moments of footage of Rebecca's twins out exploring the kale and wheat grass in? theback yard.

Jim here... Over the weekend, I'd made a string of videos for Pure Jeevan using my handy-dandy new phone. To my great surprise, when I went to post them to YouTube, they all came out sideways! So, I'm sorry, friends... you'll have to endure (if you so choose) a somewhat disorienting video, below. But, hey, at least it reminded me of that wondrous quote from the movie Sideways! I imagine Paul Giamatti describing one of my own recent creations this way -- a sort-of half-raw, yet still very healthy delight that I like to make sometimes.
My reason for featuring a less than 100% raw recipe is two-fold. First, I'd been discussing transitioning to raw (see yesterday's post). And, adding more raw into your non-raw diet is a great way to transition. I believe that raw sauces are an excellent way to achieve this, as I'll explain in the video. Second, if you do prefer a 100% raw dish, then you can simply replace the beans with something else -- perhaps sprouted beans, or maybe your own invention from the dehydrator.
Here's the next component in our raw taco recipe -- the guacamole. This is Wendi's favorite component! Enjoy!!!
Well, it's officially summer here! This time of the year is extra special to us now that we're healthier. Not only is there an abundance of fresh, local organics to eat, but the sun also shows itself to us a lot more (Pittsbugh is ranked as one of the places experiencing the least amount of sunshine per year). The sun actually used to make me feel physically ill (I wrote a bit about that in an earlier post), but ever since I've switched to a raw vegan diet I find myself drawn to the healing sunshine.
Before switching to a raw lifestyle, we used to go on a lot of outings (picnics) and we'd also go camping. I remember a friend voicing concern when my diet was beginning to change to raw foods. She felt I wouldn't be able to go camping anymore and that things like picnics wouldn't be fun for someone eating a raw food diet. She thought I'd need access to a refrigerator in order to keep all my raw foods fresh and a kitchen where I could prepare the delicious foods she had been seeing me eat.

As we promised yesterday, we're featuring a wonderful (and LONG!) video interview today with the incredible John Kohler of Santa Rosa, CA. You may be familiar with John from some of his popular web sites, most notably his "Living and Raw Foods" community site at www.RawFoods.com. Below are parts one, two, and three of Wendi's interview. They're roughly 10 minutes each. (That's a lot of time, I realize, but at least check out Part 1 if you're short on time, as it offers an amazing look at John's front yard.)
Wendi said she was at a loss for words when interviewing John at his home (and you'll soon see why!), because what he has done on his 1/10th of an acre lot is *phenomenal*. He told Wendi off the video that it's all a matter of trial and error--finding what grows easily and well, and working with those plants the most. If something takes a lot of effort, or is difficult to easily grown, he skips it and focuses on what can give the most yield for the least work. Almost everything grown on John's land is edible!

John has a lot going on, including a monthly potluck. Wendi and KDcat happened to be in town on the night of the March potluck, so Wendi was invited to speak at the event. It was a nice, laid-back group of people, Wendi said, and they sat at a long table talking about the raw lifestyle, health issues / concerns, what children are fed in school, and so much more -- a really nice group of people, Wendi said, noting she'd love to visit them all again. How do I eat dandelions? I heard they are good for me, but I tasted one and they are so bitter. I don't know how I could ever eat them, even if they are supposed to be so good for me. Can you help
First, congratulations on being so open-minded when it comes to trying new things! Too many people never move far away from their comfort zones, especially when it comes to diet, and they miss out on a lot. So, good for you to at least consider and then try dandelion greens!

She, with the help of her friend Melissa (of Food Under Foot), prepared a beautiful platter of pastas and some sauces that we all enjoyed when I returned home yesterday for lunch.

Today, however, we're doing an outing with all of the prep work done at home -- so no need to pack knives and cutting boards! We're also focusing in on a few seasonal ingredients. Today I answer the second part of a letter Jim received from a Pure Jeevan member who was seeking advice about her daughter who has decided to become a vegetarian. Rather than quote parts of her letter, I'll summarize the questions (because they are general questions that we hear a lot and our answers are given for everyone, not just the individual who sent the most recent letter).
