While on our walk, Pete pointed out that in the building on our right there are some amazing kale chips being produced. Kale chips ! I asked if he was referring to raw food kale chips and he nodded. Of course, I had to investigate and find out who was producing them and possibly meet the person. Well, what a treat we were in for!
One of the workers directed us to an office nearby where we met a lovely woman named Blessing. It turns out, Blessing is the producer of the kale chips we received from our Official Snack Sponsor during our tour, Natural Zing. Not only does Blessing produce some of the most popular kale chips in the raw community, her company is also the manufacturer of the famously delicious "Raweo" cookies (which you can find on Natural Zing's site)!

I've received countless emails over the past few days, thanks to Kevin Gianni's video (below) about the potato pancakes I made for he and Annmarie when they were visiting. In many of the emails you were thanking me for the free eBooks, but some of you had questions (and even some concerns) about sweet potatoes. I've answered you all individually, but I thought it might be a good idea to spend some time discussing the sweet potato a little more. Wow, are you in for a treat! I came up with the most delicious soup recipe today! I wanted to make something that didn't require use of the food processor, blender, or dehydrator because I've gotten quite a few emails saying that it's too hard to be raw if you don't have the money for the appliances.
I disagree that it's too hard to be raw without the appliances. It's definitely easier to do it *with* the appliances, but it's not overly hard to do it without. So, from time-to-time I'll try to create recipes that don't use anything more than a knife and a chopping board to show you that it's not too difficult to eat raw. :-)
Today we'd like to introduce you to one of the sweetest, most creative, and passionate raw foodists we know. She's petite, pretty, pleasant, powerful! She continually shares her knowledge about the raw food lifestyle with others and educates many individuals about our human rights when it comes to the foods we grow and consume. Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!
As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

Are raw foodists invincible to the common cold? I have to admit that I kind of assumed that was the case. If it's true, at what point does the invincibility kick in? I've been raw for over three years (over two at 100%) and yet the past few days have found me overcome with sneezing, sore throat, runny nose, and fatigue.
My first thought, once my throat started to hurt, was: "Did I eat anything different recently that I'm reacting to in a negative way " But, nothing had changed.My diet is relatively clean, with the exception of the times when I consume too much nut dip. So, when the sneezing and runny nose were added to the sore throat, I knew something else was going on. I had to admit it: "I'm not invincible."
Jim here... A health-conscious friend of mine was feeling sick today. And, while I certainly do not advocate harping on the sick, I did have a very mild discussion with her when she phoned me for some advice. I asked, "Do you know what cognitive dissonance is "
"I'm not sure," she replied.
Well, I hope we're finally approaching the true end-game of our whole move. We now have our home listed with a new realtor (no longer going it alone as a "for sale by owner" scenario), so we're hoping that a renewed effort (and a lower price) will attract a buyer. The market seems to be perking back up a little as well, which certainly can't hurt anything.
Thanks to everyone who sent in suggestions for places we should consider moving to. I assure you that we researched each and every one to an almost ridiculous degree. There are more amazing places to live than we ever knew, and we were delighted to learn about some areas with which we weren't very familiar -- funky little enclaves in Texas, Tennessee, New Mexico, etc. I think we've hinted as to our inclinations before, but I can tell you that, after so many months of intense deliberation, we believe the best domestic home for Pure Jeevan is probably in Oregon.
