I've received countless emails over the past few days, thanks to Kevin Gianni's video (below) about the potato pancakes I made for he and Annmarie when they were visiting. In many of the emails you were thanking me for the free eBooks, but some of you had questions (and even some concerns) about sweet potatoes. I've answered you all individually, but I thought it might be a good idea to spend some time discussing the sweet potato a little more. Here's the vid, and then I'll include some of the questions I was asked:
Yesterday, we covered the concept of "unsubscribing" from unhealthy practices. This was of course based on the common Internet practice of subscribing and unsubscribing to various things like newsletters and email lists. I receive quite a few of these each day, many raw foods ones and many non-raw ones. Among the non-raw, one that has been interesting to me lately is called the Art of Non-Conformity, penned by Chris Guillebeau. Basically, Chris' site chronicles his adventures in reaching his personal goal -- to travel to every country in the world! Along the way, he writes about all sorts of out-of-the-box things, as the blog name implies.
Today, he posted something that is remarkably insightful and applicable to our subject matter here, even though his context was completely different. The entry, entitled simply "Before and After," discusses the drinking water problems in much of Africa, focusing for the moment on Liberia. Atop the piece (the "before" picture) is a muddy water hole, the only source of drinking water for one village. The next picture (the "after" shot) shows a different, very happy village obtaining fresh, clean water from a newly installed well. Chris closes his article with the following quote:

It's been nearly half a year since we posted a long meditation on living patiently, noting the unique, sometimes-at-odds dovetail that exists between (1) experiencing the zen of patience and (2) living the electrically charged life of raw foods. While we're STILL living with the same patience we talked about, I have to admit there have been times when we've been in not-so pleasant touch with some real frustration about getting our home sold and finally moving on to all of the exciting stuff we have planned for us and for you.
Wendi and I are absolutely ecstatic about taking our raw foods message to the next level -- and not just "next level" meaning more a few more blog posts and videos, but a true quantum leap in terms of our immersion into this world and commitment to advocating the lifestyle. It just gets a little tough, even when practicing patience, to be kind of stuck in the starting gate.

Many of you know some of my story of healing. I suffered with Polycystic Ovarian Syndrome (PCOS) since I was a young teenager. Over the years, I began putting on more and more weight until I was nearly morbidly obese. I learned a lot about PCOS and how there is always an accompanying issue with Insulin Resistance.
Countless overweight women search the Internet looking for help in dealing with PCOS, hoping to find a natural cure to the harsh medications often prescribed that tend to cause other health concerns in our bodies. One of the most often asked questions is from women who have a pretty good understanding of PCOS. Wow, what a strange episode we have for you tonight! As you'll see, it was a really bizarre day here at Pure Jeevan. Wendi's out of town with her friends Rawbin and Jeff (owner of NaturalZing) helping NaturalZing with their booth at the Green Festival in Washington, DC. Too bad she's away; she missed opening the mail today and seeing a highly unusual letter from the Department of Homeland Security! The topic? Well, it turns out Pure Jeevan is under governmental surveillance -- and our chief surveillor, one "Larry Ferguson," actually decided to introduce himself and make some comments about our Bananas episode (which we hadn't even released yet!). Sounds highly unusual, I know. But, he was actually doing us a favor. Take a look (vid shows me reading part of his letter, then the banana episode proper):
As you heard, Larry writes: "I believe your viewers deserve to know, for example, that bananas have roughly 100 calories each, are high in Vitamin C, and fiber. You might also want to mention that they contain considerable levels of B6, which is good for metabolic functions as well as nervous and immune systems. B6 also helps you produce antibodies to fight diseases and plays a strong role in brain function and even maintaining hormonal balance. Your body can't store B6, btw, so you need to get it every day. Of course, most people will know already about the great potassium levels in bananas. Potassium is great for controlling blood pressure and certainly reduces risks of heart problems. Bananas also contain manganese, which your viewers probably already know about after your persimmons video."

Those consuming a raw food diet sometimes use a dehydrator to prepare raw food dishes. They do this at low temperatures, below the point of actually cooking the foods, to intensify flavors, reduce the amount of moisture in the dish, and sometimes to take the chill off something they'd rather serve a bit warmer than straight out of the refrigerator. There is a practice that we've seen, however, that is actually cooking the very foods were taking such great measures to consume raw! Let me share an experience I had when I first started eating raw foods, that will help explain how some of us may be cooking our foods by mistake.
In the beginning of eating raw foods, my entire family loved the Vegetable Stir-Dont-Fry I used to make (you can find that recipe in the free eBook you downloaded when you first visited our site). One day I created a double recipe so we could eat more the next day, without going through the process of preparing it again fresh. The following day I took the bowl of Stir-Dont-Fry out of the refrigerator and put it into the dehydrator to take the chill off. It wasn't warming up fast enough on such a low temperature, so I thought I'd just cover the dish a little bit to trap in some of the heat that seemed to leave each time I checked the dish and stirred it around. So, I took a plate and placed it on top of the bowl with about an inch, or two, opening.

As raw foods enthusiasts for many years, Wendi and I have had the pleasure of patronizing raw food restaurants literally from coast to coast. Between us, we've been blessed to have sampled a more diverse spread of raw gourmet foods than have most people. (We hope that many others get to do this as well!)
From time to time in anyone's raw journey, it seems inevitable that thoughts crop up about opening a raw restaurant. For some, it's likely no more than a passing fantasy; for others, it may well become a firm business goal. We believe this is a fine and noble goal -- one that we'd like to see more people accomplish!

I'd like to talk with you about diet and experimenting. I've been learning about natural healing and foods/health since I was a very young woman. Somewhere along the line I knew that what I was eating was either making me feel better, or worse, and that food was related to health (it was more than just to fuel the body). It was with this knowledge that I stepped into the realm of natural healing and stumbled around for most of my life.I've learned about vegetarianism, herbs, the negative effects of dairy on the body, veganism, essential oils, Ayurveda, harmful chemicals in and around our foods, and so very much more.
