What better way to start our Fun-Filled Friday than by celebrating Jim's birthday ! He worked for half the day and now he's home for a long weekend. So far we've had a nice lunch (cashew/macadamia cheese with red peppers and celery) and birthday pie (mango and pineapple!) after singing "Happy Birthday" to him! This evening we'll have veggie stir-not-fry, since that's what Jim has requested. I prepared it earlier and it's in the dehydrator to marinade and get a bit warm.

Thanks to Bitt, yesterday, for pointing out that one possible misinterpretation of yesterday's post (on celebrity weight loss) could be that "thin = healthy." I'm sure that, while there are countless wonderful benefits to being a famous actor, one of the less wonderful aspects of that life must be the pressure to remain young, thin, attractive, etc. It would seem realistic to me to assert that, additionally, women are held to even more objectified standards than are the men out there (although, in fairness, note that 6 of the 11 stars profiled in the Yahoo feature linked to yesterday were in fact men).
In any case, the post's intention was never to imply that one's weight is necessarily the best indication of one's overall health. After all, we all know thin people afflicted with serious health challenges.

There are many things to be thankful for in this life, but for our very first Thankful Thursday entry we'd like to stress how thankful we are for the vibrant health we now have. The new Vitamix container arrived within two days (they knew we were hard core Vitamix users and put the container in the mail the day we ordered it to replace the broken one). So, what was the first thing we made in our shiny new container (after washing it, of course)? A DELICIOUS coconut smoothie!
Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet!
